  1. To a large pot, add the stock, carrots, maple syrup, mustard and thyme. Cover and bring to a boil then reduce heat to medium. Let simmer, stirring occasionally until carrots are tender.
  2. Puree the mixture in a blender. Return to the pot and heat on low. If the soup is too thick, thin with a little water to achieve desired consistency.
  3. Incorporate ½ cup sour cream. Garnish as desired with bacon, green onion, seeds, toasted nuts or, if you want to get fancy for guests, use a piping bag and add an artful drizzle of sour cream!
